2 pounds plum tomatoes, halved lengthwise

2 red bell peppers, cored, seeded and quartered

1 red onion, halved lengthwise

2 tablespoons extra-virgin olive oil

2 cloves roasted garlic

1/2 teaspoon balsamic vinegar

1/2 teaspoon salt

Fresh-ground black pepper, to taste



Set racks in upper and lower thirds of oven; preheat oven to 425 degrees. Cover 2 baking sheets with foil; coat foil with no-stick cooking spray.

Toss tomatoes, bell peppers and onions in a large bowl with 1 tablespoon oil until evenly coated. Arrange tomatoes, cut side down, on 1 baking sheet; place it on bottom rack of oven. Arrange peppers and onions on second sheet; place it on top rack.

Bake tomatoes 25 minutes until skins are blistered but still holding their shape. Turn up edges of foil so it holds in juices. Lift off tomato skins, using tongs; discard skins. Set tomatoes aside.

Bake onions 25 to 30 minutes until translucent but not soft; remove from oven. Set aside. Bake peppers 30 minutes until soft. Transfer to a small bowl; cover with plastic wrap. Let peppers steam 10 minutes. Lift skin from peppers; discard. Chop all vegetables coarsely, reserving any liquid from peppers remaining in bowl.

Heat remaining 1 tablespoon oil in a deep skillet. Add garlic, tomatoes and peppers with their liquid, onions and vinegar. Cook, stirring, breaking vegetables into small chunks, 5 minutes until most liquid has evaporated. Add salt and pepper. Makes 4 servings.

Per serving: 136 calories, 46 percent calories from fat, 8 grams total fat, no cholesterol, 1 gram saturated fat, 3 grams protein, 17 grams carbohydrates, 4 grams total fiber, 313 milligrams sodium.

To roast garlic: Heat oven to 375 degrees. Place head of garlic on a sheet of heavy-duty aluminum foil; rub with 11/2 tablespoons olive oil. Wrap in foil; roast 50 to 60 minutes until tender.
